1 pound ground beef or turkey 2 large onions, peeled and chopped 3 garlic cloves, peeled and minced 2 cans crushed tomatoes (28 ounces, each) 1 can tomato sauce (14.5 ounces) 1/2 cup fresh parsley, minced (1/4 cup for soup + 1/4 cup for garnish) 2-1/4 teaspoon fresh basil leaves, minced 1-1/2 teaspoon fresh oregano leaves, minced |
1/3 teaspoon dried thyme 1/4 teaspoon freshly ground black pepper 3/4 teaspoon kosher salt 3/4 teaspoon sugar 1 package refrigerated cheese ravioli ( 9 ounces) 1 cup freshly grated Parmesan cheese (1/4 cup + 3/4 cup for garnish) |

1. Prep - On a cutting board, prep the onions, garlic, parsley, basil, and oregano. 2. Cook - In a Dutch oven, cook ground meat and chopped onions on medium high for about 5 minutes or until meat is no longer pink. 3. Add and cook - Add minced garlic and cook 1 minute longer. 4. Drain - Drain off grease. 5. Add - Return pan to heat and add crushed tomatoes and tomato sauce 6. Stir in - Stir in 1/4 cup minced parsley 7. Add - Add basil, oregano, thyme, black pepper, salt, and sugar

8. Bring mixture to a boil, then immediately reduce heat 9. Simmer - Cover and simmer for 25-30 minutes. 10. Prepare ravioli - In a separate pan, boil water and prepare cheese ravioli according to package directions. 11. Grate Parmesan cheese - Now is a good time to grate the Parmesan cheese. 12. When ravioli is finished cooking, drain off water. 13. Add - Add ravioli and 1/4 cup of the Parmesan cheese to the Dutch oven; stir 14. Garnish - Ladle soup into bowls and garnish with grated Parmesan cheese and fresh parsley. Enjoy! |
